Most chocolates made for diabetics mostly have horrific sweeteners in them. That does not sound very thoughtful, does it? The good news is that you can actually make delicious baked goods for diabetics that use cocoa, with stevia to sweeten. The stevia industry in the U.S. is not allowed to mention the little detail about its sweetness because the sugar lobby has the FDA in a chokehold. Do look up stevia on the net, and be prepared for a pleasant surprise. No, you don’t have to risk your kidneys or take a chance on cancer just because you like your coffee sweet.

If you want to give someone a truly healthful gift of chocolate, you’ll have to make it yourself. Happily, with more and more people catching on to stevia, there is always someone with a new recipe to try. Between cocoa powder, carob, and stevia, the possibilities are endless for the variety of cakes, icings, brownies, shakes, and smoothies you can make.

One gift possibility for the diabetic in your life is for you to make mixes for them. While you do that, you can easily address any other nutritional specifics for them, for instance, gluten-free needs, or non-dairy, or whatever. This will involve some experimentation on your part, but if it’s someone you love, it’s worth it.

Additional gift ideas include: hot chocolate mix to be mixed with hot soy, rice, almond, or cow or goat milk—whatever they use; brownie mix; chocolate cake mix, chocolate pudding mix—all with instructions, of course. You can use the recipes you find on stevia websites or stevia cookbooks in your public library. If they don’t have any yet, ask them to order them.

Try out the recipes and tweak them to your tastes. To make a mix, just mix the dry ingredients together and write out the rest of the recipe. Package in plastic zip bags in recipe-batch amounts. You can then put the bags in cute gift tins, along with the instructions.
